Mango & Sticky Rice is a traditional Thai dessert made with glutinous rice, fresh mango and coconut milk.
Sweet Sticky Rice:
- 4 cups of Sticky Rice
- 2 cups Coconut Cream (unshaken)
- 1 tsp Salt
- 1½ cup Sugar
Coconut Dressing:
- 1 can Coconut Cream (shake well)
- ¼ cup Sugar
- 1 tsp Salt
Steps for Sticky Rice:
- Soak Sticky Rice in room temperature water for 3 hours
- After 3 hours boil a pot of water (2liters) in the 26cm pot (as shown in video)
- Drain Sticky Rice & add it to the bamboo basket (as shown in video), close the lid & let it steam for 15 mins
- After 15 mins turn it over & steam for another 15 mins
- Move the cooked Sticky Rice in with the Coconut Sauce
- Mixed the 2 together well
- Wrap the Sticky Rice for about 15-20 mins to let the Sticky Rice absorb the sauce
- After 15 mins mix again
- Ready to serve
Steps for Coconut Sauce:
- In a separate bowl add 2 cups of Coconut Cream (unshaken)
- Add 1 tsp Salt
- Add 1 ½ cup of Sugar
- Mix well
Steps for Coconut Dressing:
- In a medium, pot add 1 can of Coconut Cream (shake well)
- Add ¼ cup of Sugar
- 1 tsp of Salt
- Boil for 10 mins under low heat
