Thai yellow curry, also known as kaeng kari in Thai, is a mildly spiced, rich, and flavorful dish that originated in Southern Thailand.

Ingredients:

  • 2 tablespoons Yellow Curry paste
  • ¼ teaspoon Turmeric 
  • 1 ½ cups of coconut milk (make sure to use Thai coconut milk)
  • ½ cup of chicken stock or water
  • 8 oz chicken breast
  • ¼ of an onion
  • ¼ of fresh carrots (cut into cube sizes)
  • ½ cooked potato (cut into cube size)
  • ½ red and green bell pepper
  • 2 tablespoon Fish sauce
  • 1 teaspoon sugar

How to make: (25-30 minutes cook time)

  1. Boil your potatoes and carrots till done, let them sit on the side
  2. Add coconut milk and yellow curry paste, and turmeric powder in a heated pot, let it simmer for 5 mins under medium heat
  3. Add chicken broth
  4. Wait until the curry is boiled, then add your choice of protein. Let it simmer for 5 mins 
  5. Add your cooked potatoes and carrots, bell peppers, and onion. Let it sit for about 3 mins, or till boiled 
  6. Add fish sauce and sugar
  7. Simmer for 4 minutes 
  8. Pour into your favorite bowl and enjoy!
