Thai yellow curry, also known as kaeng kari in Thai, is a mildly spiced, rich, and flavorful dish that originated in Southern Thailand.
Ingredients:
- 2 tablespoons Yellow Curry paste
- ¼ teaspoon Turmeric
- 1 ½ cups of coconut milk (make sure to use Thai coconut milk)
- ½ cup of chicken stock or water
- 8 oz chicken breast
- ¼ of an onion
- ¼ of fresh carrots (cut into cube sizes)
- ½ cooked potato (cut into cube size)
- ½ red and green bell pepper
- 2 tablespoon Fish sauce
- 1 teaspoon sugar
How to make: (25-30 minutes cook time)
- Boil your potatoes and carrots till done, let them sit on the side
- Add coconut milk and yellow curry paste, and turmeric powder in a heated pot, let it simmer for 5 mins under medium heat
- Add chicken broth
- Wait until the curry is boiled, then add your choice of protein. Let it simmer for 5 mins
- Add your cooked potatoes and carrots, bell peppers, and onion. Let it sit for about 3 mins, or till boiled
- Add fish sauce and sugar
- Simmer for 4 minutes
- Pour into your favorite bowl and enjoy!
